Mini Pancakes

This was lunch one day this past week.

Quick and simple and the kids love them.
1 cup of milk
1 cup of flour(preferably unbleached or whole wheat. 1/2 cup white and 1/2 cup wholewheat works nice too.
1tbsp baking powder
1 egg

Mix all together and fry on the frying pan. I like to use a little bit of butter to fry them up.

Serve them with Maple syrup and fruit on top(or on the side if you have picky eaters)

I thought you'd like this homemade recipe for syrup. I make it ALL the time, and it is super yummy. Just don't "broil" it like the recipe says...just BOIL it!

  2. Thanx Kim.
That is a very intresting recipe.
For the most part we avoid corn syrup. I know Maple Syrup is expensive but I feel that because it is an actual true source from nature it is much healthier then a processed source.
